The creation of the Kathi Roll is often attributed to a person named Nizamuddin, who was the owner of a restaurant called Nizam’s in Kolkata. Nizam’s restaurant is considered one of the iconic places where the Kathi Roll gained popularity.The story goes that Nizamuddin, in the mid-20th century, wanted to offer a convenient and portable alternative to the traditional kebabs and parathas that were being served in his restaurant. He came up with the idea of wrapping the kebabs in a paratha, making it easier for customers to carry and eat on the go. This innovation led to the creation of the Kathi Roll as we know it today.
Cooking Style
The Kathi Roll is essentially a laccha paratha or roti (Indian flatbread) fried in Ghee/Vegetable oil wrapped around a filling of grilled or skewered paneer/Indian Cottage cheese, usually marinated in spices. The filling also includes crunchy onion ring,spalsh of lemon juice,coriender etc.
